Description
A little bit of olive oil, butter and lemon is all this mild, slightly sweet and flaky fish needs.
Ingredients
2 lbs.Cod
4 tablespoons olive oil
2 tablespoons butter
½ cup all purpose flour
Salt & Pepper
Juice of 1 lemon
Instructions
Pat dry cod filets, then generously salt & pepper. Dredge filets in the flour, coating all sides
evenly and set aside.
Place a frying pan over medium heat and allow it to come to temperature.
Add oil, then butter and allow butter to just begin to foam.
Add felits to pan and without moving allow to sear/brown, about 3-4 minutes. Carefully turn
over and sear/brown the other side. Add lemon juice to the pan and continue to cook for 1-2
minutes.
Carefully remove the filets from the pan and serve.
